Soufflé

Healthy Chocolate Soufflé

Soufflé, is a wonderful sweet pillow filled with deliciousness. I have only had it twice before and since my last taste, it has been hard to forget. The french are known for their unforgettable pastries and desserts and it has been a though job to stay clear. We previously visited a five star French restaurant and I made the best decision and that was to have the citron Soufflé. I was flabbergasted, because my dessert expectations was literally blown away.

Steam came pouring out, with the intoxicating warm smell of citron. I usually don't like the taste of citron or lime in a dessert, but this was just heavenly. I was savouring every bite, until it was a job well done.

It has been weeks now and I have been dreaming about one of the best dessert I have had in France! So of course I had to replicate...but with chocolate of course. Everyone likes chocolate right, so this will be a crowd pleaser for sure!

This is my version and it's sugar, gluten and dairy free and it only takes 20 minutes to prepare. Serve it right out of the oven with fresh fruit or frozen yogurt. To make it more decadent add melted dark chocolate to your egg yolk mixture, or serve the dessert with ice cream instead of frozen yogurt.

I know that low carb and sugar free desserts are not always a popular choice, but they will never know the difference...

Ingredients

4 eggs

1/4 cup of stevia or normal sugar

125g of greek yogurt

1 tbls of Maiziena

2 tsp of cocoa powder

pinch of salt

1 tbls of almond butter

1-2 dates or 2 tbls of honey

coconut oil

1/2 cup of honey

1 tbls of cocoa powder

Methord

  • Beat the eggs whites till they reach the soft peak stadium.

  • Leave aside.

  • Mix the egg yolks with the greek yogurt.

  • Add the almond butter, cooled down mashed dates or 2 tbls of honey.

  • Sif the Maiziena and the cocoa powder in to the egg whites mixture bit by bit, while mixing it in with a spatula.

  • Scoop the yolk mixture in to the egg white mixture spoon by spoon while mixing it delicately with a spatula.

  • When the mixture is light brown and fluffy poor in to six coconut oil smeared ramekins.

  • Sif over a little bit of cocoa powder.

  • Place the ramekins onto a baking tray and add a little bit of water to the baking tray.

  • The water should cover the bottom part of the ramekins by 1cm.

  • Let it bake for 10 min @205°C.

  • While the soufflé bakes mix together the honey and the cocoa powder till it becomes a chocolate syrup.

  • Serve immediately after the baking is done. Start by making a opening in the middle of the soufflé and pouring in your cocoa syrup.

  • Eat with dark chocolate, fresh fruit or frozen yogurt.

No fail, French dessert that is easy to make at home. You only need a few ingredients that will probably be in your kitchen already.

So what do the french say?

French idiom: "Retomber comme un soufflé" means falling back like a soufflé, running out of steam.

Guess what? Soufflé in french means wind. Now how fitting is that!
