Theses two dishes are dedicated to those nights... you know what I am talking about.Busy,messy and certainly no time for fuss!.These two salads certainly come in handy. Lately there have been a few of those nights in this household. Also with 35°C as an added bonus that's when you need a dish that is easy to prepare in a jif
When I am home alone contemplating about eating greek yogurt, honey and almonds once again for dinner my hungry gut is in the mood for something delicious and crunchy,but I want something quick and easy (unfortunately no pre-made Woolworths meals available here).I have been craving coleslaw since we have returned form SA and decided to combine that with tofu,chickpeas and a curry hummus sauce.
For the hub I decided upon a carb, protein mix after a long day of work that will go down just fine. That is mostly what South African men live on I would say. The salty mix of beef and chorizo alongside the crispy, doughy taste of the potatoes will make his blue monday much more tolerating.
Don't worry ladies, I have your back! The crunchy, tangy curry taste of the salad wont win second place. Tofu may not be in your dietary preference and therefore can be replaced with chicken. Which is also very delicious.
Sausage & Potato Scramble
Ingredients
2 cups of Potato wedges( pre-cooked)
2 plain Beef sausages
1 Chorizo sausage
1/4 red onion
1/4 cup of red/ green pepper
1 tsp of garlic
2 ml salt
3 ml of paprika
2 ml of chilli powder
1 tbls of olive oil
Methord
*Cut the sausages in to little pieces.
*Sauté the onion and garlic.
*Add the sausages and sauté till brown and crispy.
*Remove the sausages and add the potato wedges.
*Sauté till crispy and add the beef broth with the rest of the already sauté ingredients and your spices.
*Remove from heat once fully cooked and serve with cheese, sour cream or guacamole.
Crunchy tofu curry salad
Ingredients
1/2 cup of sliced tofu
1/4 cup of chickpeas
1 tbls of olive oil
1 cup of coleslaw
1/2 cup of grated carrots
1/4 cup of rasins
1/4 cup of sunflower seeds
Dressing
1/2 tsp of curry powder of your choosing
1 tbls of hummus
1 tsp of lemon juice
1 tsp of honey
pinch of chilli powder(optional)
Methord
*Sauté the onions with the spices.
*Add the tofu, salt & pepper and the chickpeas till brown.
*Meanwhile mix the raw salad ingredients.
*For the dressing mix together the hummus, lemon juice, honey, curry powder, salt and pepper.
*Mix half of the salad dressing into the salad mixture.
*Scatter the tofu and chickpeas over the salad and drizzle the rest of the salad dressing over the salad.
