Red velvet Whoopie pies with mint dark chocolate

December is here. Three weeks to go before Christmas. It is crazy to think that this year is almost over. This is my third Christmas celebrated without my extended family and needless to say I miss all the traditional rituals. Like spending Christmas Day together, laughing and telling stories. Playing games with my niece and nephews. Opening up presents was and are still a favourite of mine, whether it's christmas or not! It's a time where you can just really enjoy the benefits of having a big family.

We are four kids; three girls and one boy. My other siblings have kids already, I yet have to take the plunge! But it's quite busy as it is, everybody comes together to celebrate and it has been weird to not have that here! We have a lonely christmas three in the corner with just two prezzies. Very very sad... but still we are fortunate to have what we have. I have made other christmas memories though like, last year I spend a white christmas in the snowy alps. That is an experience that I will never forget.

This year I will celebrate with a new SA "family". We are mostly afrikaans speaking, so that just makes things a bit more easier and homey. We moved away from home and still we found it once again in France of al places. There will be a lot of people, food, laughing and celebrating family. Blessed!!

So what goes in to you Christmas planning? The menu, decor, amount of people coming, presents, drinks and ofcourse who is wearing the father Christmas costume! I loved to be surprised on the night of the 24th with father Christmas ringing the bell. I would scream out that it was my brother and not, in fact father Christmas. I kinda spoiled it. I mean come on people kids are smart. I don't know how am I gonna fool my kids one day. Back then there was no cellphones or Ipads, being entertained by the idea of father Christmas was quite easy!

There is no better way than to start the new season off with then with Red velvet Whoopie pies. Move aside meat pies! Red, deliciously creamy, decadent and sweetened with a hint of mint dark chocolate. Def the right snack and perfect gift to bake for your loved ones. Super pretty and delicious!

Dress up with icing sugar, pepper mint crisp chocolate and wrap them up in a maison jar. Great idea is to make ready made mixes in maison jars and give that as a gift! I'm gonna make some more and enjoy them with a hot chocolate!

Red velvet Whoopie pies with mint dark chocolate

2 cups of flour

2 tbsp cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/2 cup soft butter

1 cup castor sugar

1 tsp strawberry essence

1 whisked egg

1 tsp vanilla essence

1/2 cup butter milk

1-2 tbsp red food colouring

Icing

125 ml tub of cream cheese

2 tbsp butter

1/4 cup icing sugar

1 slab of Lint mint dark chocolate or peppermint Crisp chocolate.

1. Sift flour ,cocoa powder, baking powder and the salt.

2. Mix the butter and sugar in a separate bowl until fluffy and white.

3. Beat in the egg and then gradually add the flour mixture.

4. When all is combined and smooth add the red food coloring and mix well.

5. Line a baking tray with parchment paper and then scoop out a tbsp of the dough mixture (1-2cm in hight) for every cookie ,about 2cm spacing in between each cookie.

6. Bake them for 10-12min (depending 1-2cm in height) at 180°C.

7. Remove from oven and let them cool down.

8. Mix together the icing ingredients till smooth.

9. When the cookies have cooled smear about a tsp of the icing on one of the cookies and add another cookie to make a whoopie pie.

10.Melt the chocolate and drizzle on top of the whoopie pie.
