Bonne année Chai Nutella tart

Woahoa!! 2016, let that sink in...

In one year there are 365 days, just under 2 trillion hours and 525600 minutes. All of this time and somehow recounting every second seems impossible. That's why making new year resolutions are easier than recounting the time you have lost, but rather saying yes I will do better this year.

What are your resolutions? I don't really believe in wishing for a better year, but rather hoping bettering myself within the coming year to come. To be more patient, kind, loving and sharing to others. Maybe you're wishing for a better job, higher pay, happiness or someone to love. Whatever it may be, let it be to better yourself and the world that you are in.

In France, new years is not really a biggie, or have I missed something these last two years. There are loads of sparkly dresses in the stores for the private dinner parties. It's not as openly celebrated like back in SA. I think spending christmas and new years with family and friends at home is the way to go. I do want to dress up and go dancing for a change! Langarm

Apart from the private dinner parties. There is a fun tradition that is celebrated with La galette de Rois. It is a cake mainly made out of puff pastry with a frangipane center and on the inside is also a hidden paper crown or another figurine. Whoever gets the crown or "la fève" will become the king for the day and has to buy the next cake. Here is a website to make a La galette de Rois for your new years.

Over here New years might be traditionally celebrated with this puff pastry cake, but I made a Chai Nutella tart that is as easy as 1,2,3... Bonne Année!!

Bonne Année Chai Nutella tart

Ingredients

Filling

4 egg yolks

2 tbsp Corn starch

pinch of salt

1 1/2 cups milk

1/4 cup Nutella

2 tbsp Chai spice mixture(I used two chai tea latte sachets)

3/4 cup brown sugar

Base

1 1/2 cups(Speculoos or ginger)cookie crumbs

1/2 cup butter

Fudge crumble

1/2 cup butter

1/4 cup cream

1k brown sugar

1 tsp vanilla essence

Method

1. Mix the crushed cookies with the melted butter and press flat onto a parchment paper lined round baking tray, bake for 10 minutes @180°C.

2. Start making the fudge crumble, by placing all the ingredients in a microwave safe bowl.(Be aware that plastic can melt because this fudge has to become very hot to reach crumb like texture.)

3. Let it cook in the microwave on high heat for 15 minutes, stop every 3 minutes and whisk so that the fudge does not boil over. Let it cook a bit longer for the last stretch.

4. Once it has finished cooking, remove immediately and add the vanilla essence. It will look as though the vanilla essence is boiling in to the fudge for a few seconds, start whisking furiously until you have a crumble mixture.

5. For the filling whisk together the egg yolks, milk, sugar, starch and salt together and place in the microwave. Let it cook for 15 minutes on high heat, stopping every tree minutes to whisk until it has thickened.

6. Once it has thickened, mix in the chaitea mix or latte sachets and the Nutella.(If you do not like chaitea spice then add just 1/2 cup of Nutella.)

7. Pour the heated Nutella mixture on to the baked cookie crumb base, decorate with the fudge crumble and extra fudge sauce on top ,place in the fridge and serve chilled.
