Chickpea, blue cheese and rocket salad
1 cup of chickpeas
1 tsp chili powder
1/4 cup of olive oil
salt and pepper
1 block (250g) Blue cheese
2-3 cups fresh rocket
1/2 -1 cup walnuts
1/2 cup sweet chili sauce
1/4 cup olive oil
1/4 cup lemon juice
salt and pepper to taste
1. Place the cooked chickpeas in a baking tray, sprinkle over the chili powder, salt, pepper and drizzle over the oil. Bake for 10 minutes @180°C.
2. Rinse off the rocket and paper dry, then place as first layer, following with the blue cheese (cut in to strips.)
3. When the chickpeas are done, let it cool down before placing on top of the blue cheese.
4. Decorate with the walnuts.
5. Mix the salad dressing ingredients and drizzle over the salad. Serve and enjoy!
