Mini apple cider donuts with caramel bacon bits
Ingredients:
4 tbsp melted butter
1/2 cup apple cider vinegar
1 cup all purpose flour or whole wheat flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp fine nutmeg
1/4 tsp salt
1/3 cup sugar
1 egg beaten
125 ml cream cheese
1 tbsp lemon juice
Cinnamon sugar (1/2 cup sugar & 3/4 tsp cinnamon)
250 g bacon bits
1/2 cup golden syrup or maple syrup
Cream cheese frosting
125ml cream cheese
2 tbsp castor sugar
1 tbsp lemon juice
1/2 tsp cinnamon
Method:
1. Preheat oven to 180°C.
2. Melt the butter in the microwave and add the apple cider vinegar.
3. Combine the flour, salt, sugar, spices and baking powder together.
4. Whisk the egg and the melted butter mixture together and fold in to the dry ingredients.
5. Scoop into donut molds and bake for 10 minutes till golden brown.
6. Place the bacon bits and the syrup in a hot pan and fry till crispy and caramelized.
7. Once cooled, smear on the cream cheese frosting and decorate with the bacon bits or dip in the cinnamon sugar.
