Mini corn dogs, bran muffins with salmon or biltong and Mini Frittatas


Mini corn dogs (Adapted from Familyfoodfun)

Ingredients:

1 cup mini sausages or hot dogs cut into mini sausages

1/2 cup flour

1/2 cup of corn flour or golden breadcrumbs packet

1 tbsp sugar

2 tsp baking powder

3/4 cup milk

salt and pepper

500ml oil for frying

Method:

1. Heat up the oil for frying.

2. Mix together the flour, breadcrumbs, salt, sugar, baking powder, spices, and milk together until a batter forms.

3. Place in a bowl or a glass so it's easy to dip the sausages in.

4. Dip the sausages in and insert in to the oil until golden brown. (You can place them on lollypop sticks to make them easier for frying and to eat)

5. Serve with mayonnaise and chutney.

Bran muffins

Ingredients:

1 1/3 cup all purpose flour

1/2 brown sugar

1 tbsp baking powder

1/2 tsp salt

2 cups of bran or 1 1/2 cup all bran

1 cup milk

1 tsp lemon juice

1 egg

1/2 cup shredded carrots or apples

Method:

1. Heat your oven to 180°C.

2. Mix together the dry ingredients and add the tsp of lemon juice for your milk to curd.

3. Mix together the egg and the curdled milk.(you can use buttermilk if you like)

4. Mix the dry and the wet ingredients together.

5. Lastly add the shredded carrots or apples and maybe some raisins or nuts if you like. (I added nothing because I was adding a savoury topping to my muffins.)

6. Fill your paper muffin cups up until half way with the mixture and bake for 20-25 minutes until golden brown.

7. Add toppings by cutting the top part of the muffins off. Smear on the cream cheese and dip in shredded biltong or add smoked salmon.

Mini sundried tomato, bacon and mozzarella Frittatas

4 eggs

1/2 cup mini mozzarella balls

1/2 cup sliced sundried tomatoes

1/2 cup shredded bacon

salt and pepper

Oregano

Thyme

1. Whisk the eggs and add the other ingredients.

2. Pour in to muffin pans sprinkle over the spices and bake for 10-15 minutes at 180°C.
