Mini milk tarts

Mini milk tarts
Base
Ingredients:
125g butter at room temperature
100g sugar
1 whisked egg
275g flour
2 tsp baking powder
pinch of salt
Method:
1. Mix together the butter and sugar till white and fluffy.
2. Add the flour, salt and then the whisked egg until a dough forms.
3. Press about one tbsp of the dough in to molds. Press flat and poke a few holes with a fork on the bottom.
4. Bake for 10-15 minutes @180°C till golden brown.
Filling
Ingredients:
1L milk
25g butter
1 tsp vanilla essence
1 whisked egg
2 egg yolks
150g sugar
60ml flour
60ml Maiziena or corn flour
Pinch of salt
Cinnamon
Method:
1. Heat up the milk, vanilla essence, and the butter in the microwave at high for about 7-10 minutes till it reaches boiling point.
2. Whisk the egg, egg yolks and sugar together, add the flour and the corn flour until paste forms.
3. Remove the milk and add a little bit to the egg mixture and whisk well.
4. Pour in the egg mixture into the milk and whisk well and place back in to the microwave, let it cook for another 10-15 minutes whilst whisking every three minutes till it has thickened.
5. Pour into the cooled tart bases and sprinkle over the cinnamon.
6. Let it set in the fridge till serving time.
