Buche de Noël Mignon Reine

Looking for a quick last recipe to entertain the kids this christmas...Buche de Noël a la Reine with snowflake cookies. I made this recipe for My Milk box December issue. It was such a fun experiment and your kids will love it!! Full recipe below the video!

Buche de Noël Mignon Rennes

Ingredients:

Four eggs

250 castor sugar

50ml ice cold water

250ml cake flour

1 tsp baking powder

2ml salt

5ml vanilla essence

Maizena

Extra castor sugar

1 tbsp cocoa powder

1/3 cup of hot milk

One damp, clean kitchen cloth

Parchment paper

Method:

1. Heat up your oven to 200 degrees Celcius.

2. Smear butter on a baking tray and place a layer of the parchment paper on top. Sprinkle with Maizena and shake off the excess flour.

3. Divide the egg whites and yolks and mix the egg yolks with the water, castor sugar until light and fluffy.

4. Sift together the flour and baking powder together and fold this into the egg yolk mixture with a wooden spoon.

5. Whisk the egg whites with the vanilla essence and the salt till soft peaks form. Fold this mixture into the yolk mixture like the number eight. Don't over mix.

6. Pour into the pan and spread out evenly.

7. Mix together the cocoa and the milk until paste forms, scoop out bits of the cocoa mixture onto the cake dough and make swirls with the tip of a teaspoon.

8. Bake for ten minutes till brown.

9. Turn out the cake onto a castor sugar sprinkled cloth and tear off the parchment paper carefully.

10. Let the cake cool down a bit before smearing on the caramel filling and mint chocolate. With the help of the cloth, roll up the cake. Let it cool before adding the frosting and decorations.

Caramel filling:

1 can of condensed milk

1 bar of mint chocolate

250 ml whipped cream

1. Cook the can of condensed milk submerged under water in a pot over medium heat for two to three hours. Do not let the can cook without water.

2. Once the caramel has been reached, remove and let it cook before mixing with the whipped cream.

3. Slice up the bar of mint chocolate and add half of the chocolate to the mixture.

Chocolate Frosting sugar:

125ml baking butter

3 cups of icing sugar

pinch of salt

250ml mascarpone

1/3 cup od cocoa

1 tsp vanilla essence

1. Whisk together the butter and icing sugar until smooth, add the vanilla essence, salt, and cocoa powder.

2. Fold in the mascarpone till smooth. Set aside for decoration.

Green grass frosting:

1/3 cup butter

1 1/2 cup icing sugar

Milk

Green food coloring

Mint chocolate

stars decorations

1. Cream the butter, icing sugar, milk and green food coloring together.

2. Place in a piping bag and leave it for later to do the grass. Decorate there after the grass with chopped mint chocolate and golden stars.

How to decorate:

Hair: Chocolate Sprinkles

Nose: Any red sweets, I used Haribo or Skittles

Eyes: White and brown chocolate (melt the chocolate and make the eyes on parchment paper and place in the fridge)

Ears: Pretzels or cookies

Wait there is more... Gingerbread snowflakes!!

Gingerbread snowflakes:

3 cups of flour

125g baking butter

1 cup of brown sugar

1 tbsp ginger powder

1 egg

1/2 cup of golden syrup or honey

1 1/2 tsp bicarbonate of soda in 1 tbsp of milk

2 ml salt

Whisk together the softened butter and sugar.

Add the egg, syrup, ginger and bicarbonate mix.

Mix well and sift in the flour and fold in gently.

Place the dough on a floured surface and roll out with a wooden rolling pin. Press out the snowflake forms and the brush over melted butter and extra brown sugar.
